Give me the benefit of apricot

Apricots are powerhouses of nutrition. Little dark orange balls of potency that they are, apricots are rich in beta carotene and potassium. The fresh apricot is the one high in beta carotene and it helps prevent cancer, stroke, heart disease and cataracts. The dried fruit has potassium which keeps high blood pressure at bay. It is rich in soluble fibre and helps ease constipation and blood sugar inconsistencies. It prevents iron deficiency and lower cholestrol as well. Whew!

It makes a great and tasty mid afternoon snack or a sweet treat just as well.

Three cheers for this wonder fruit.

Just be sure that the bag of apricots that you are buying is not coated with sulphites or any other preservatives. You do get dried fruit without this stuff.
